2023 Cyril & Jean-Mi Rouge

From the sandy, clay/limestone soils of the Gard, this charming Southern French classic is composed of organic Cabernet Sauvignon & Syrah. Grapes are hand-harvested and spontaneously ferment separately in cement vat, macerating for several weeks prior to pressing and blending. Aging in stainless steel before bottling unfined, unfiltered with a small amout of sulfer added at bottling.
