2025 Eduardo Torres Acosta 'Versante Bianco' Terre Siciliane

Minella, Carricante, Catarratto, Grecanico & Inzolia  Eduardo organically farms parcels totaling about 4 hectares on the north face or versante nord of Mt. Etna from 50 year old vines. Those parcels are scattered amongst 6 different  districts: Pietramarina, Allegracore, Daini, Friera, Zucconero and Caprieri. The soils are variations on sandy volcanic ash and the elevation ranges from 550 to 930 meters, averaging over 50 years old.

The bunches are hand-harvested, destemmed, co-fermented spontaneously in concrete tank without temperature control; maceration varies from two to five days. Aging takes place in a combination of Slavonian oak botti, tonneau and barrique for six to eight months. Based on the sanitary state of the harvest, one to two grams of S02 per will be added on the grapes with an additional one to two grams at bottling.
